It starts as a Manzanilla with “biological aging” under the veil of flor (yeast cap), followed by a period of “oxidative aging” in which the flor is removed and the wine is exposed to oxidation. This fusion of aging processes makes Zuleta Amontillado an extraordinarily complex wine. Aromas and flavors of toasted hazelnut, almond and mild spices. Dry, complex and medium body with a charming nutty finish.
