    100% Palomino. It starts as a Manzanilla with “biological aging” under the veil of flor (yeast cap), followed by a period of “oxidative aging” in which the flor is removed and the wine is exposed to oxidation. This fusion of aging processes makes Zuleta Amontillado an extraordinarily complex wine. Aromas and flavors of toasted hazelnut, almond and mild spices. Dry, complex and medium body with a charming nutty finish.

    100% Palomino. Aged under a layer or cap of yeast called Flor. Thisis called “biological aging” and prevents contact with the air, resulting in a yeasty, saline profile with notes of Mediterranean herbs, fresh dough, and almonds. Nutty and yeasty aromas are briny with a touch of creaminess. A round palate with salty nectarine, walnut oil and white pepper notes grace a direct lively finish.

    100% Palomino. Made from the second pressing of Palomino grapes. Oxidatively aged (without the veil of Flor) from the start. Aged approximately 5 years through the process of “Soleras and Criaderas” in American oak casks. Amber color. Intense and complex aromas of walnuts and hazelnuts, with fine notes of oak. It is dry, soft and round in the mouth with a smooth lingering aftertaste.

Perfectly assembled and integrated oak with sweet spices (cocoa and blonde tobacco), enveloped in a diary sensation. Very elegant wine. Fleshy, wide and long palate, with reminiscences of black and red fruits and a very well balanced acidity. Creamy and sweet oak hints at the end, over a mineral background. 15 months in new French Oak. 75 year old vines. ​
